My name is Casey Mitchell, I am the great- great grandson of Fred Belschner, who began providing quality goods and services to Buffalo County in 1892, in this same Amherst, NE location. This commitment to quality, and earning the trust of the community, is what has kept my family in business for over a century. During this time we have processed meat for several generations of local families. I have also had the pleasure of cutting meat with second, and even third generation meat cutters. This is truly a local family business and our goal is to make sure you are happy and well-fed.
Custom processed meat is just as it sounds. It is meat processed to your specific instructions. Whether it be beef, pork, or lamb, you and your family consume meat in your own individual way. You have individual preferences that may not be met at a retail meat counter. Custom Processing gives you the ability to convey your specific instructions to a butcher, that has cut meat for families and knows the questions to ask to ensure your meat buying expereince is as personal as it used to be. This service is provided by using locally raised livestock. Generally consumers are also local so accountability and feedback have been key to our success. In a small business like this, you cannot hide behind a website or blame a lack of performance on a breakdown somewhere in the supply chain. Also, you are intimately involved in the process of putting meat on the table that is locally raised, dry aged beef to ensure your hard earned money is spent wisely. This is how meat used to get into freezers. It was only due to mass production that large slaughter houses and "case ready" pre-packaged shipped meats became the norm.
